Spicy Red Miso Pork Bowl
for two servings
1/2 lb (220 g) / PORK BELLY
1/4 / SMALL CABBAGE
1/2 / MEDIUM BELL PEPPER
2 clove / GARLIC
2" (5cm) / GINGER
for miso sauce
2 tbsp / RED MISO
1 tbsp / SAKE
1 tbsp / MIRIN
1 tsp / SOY SAUCE
1/2 tsp / RED CHILI PEPPER
SALT and PEPPER
SESAME OIL for cooking
SHORT GRAIN RICE to serve
- Cut pork belly into thin slices. Season with salt, pepper, ground garlic and ginger. Let it sit for 10 min.
- Chop cabbage and pepper roughly into 1" (2.5 cm) square.
- Combine miso sauce ingredients.
- Heat up oil in a pan. Add pork first, then cabbage. Cover and cook for 10 min over low heat.
- Add bell pepper. Cook another 5 min.
- Add miso sauce. Mix well.
- Serve over rice.
Notes:
- Once miso sauce is added and well coated, turn off heat to avoid miso from burning.
