Spicy Red Miso Pork Bowl

for two servings

1/2 lb (220 g) / PORK BELLY
1/4 / SMALL CABBAGE
1/2 / MEDIUM BELL PEPPER
2 clove / GARLIC
2" (5cm) / GINGER

for miso sauce

2 tbsp / RED MISO
1 tbsp / SAKE
1 tbsp / MIRIN
1 tsp / SOY SAUCE
1/2 tsp / RED CHILI PEPPER


SALT and PEPPER
SESAME OIL for cooking
SHORT GRAIN RICE to serve


  1. Cut pork belly into thin slices. Season with salt, pepper, ground garlic and ginger. Let it sit for 10 min.
  2. Chop cabbage and pepper roughly into 1" (2.5 cm) square.
  3. Combine miso sauce ingredients.
  4. Heat up oil in a pan. Add pork first, then cabbage. Cover and cook for 10 min over low heat.
  5. Add bell pepper. Cook another 5 min.
  6. Add miso sauce. Mix well.
  7. Serve over rice.

Notes:

  • Once miso sauce is added and well coated, turn off heat to avoid miso from burning.
