Roasted Whole Onion with Balsamic

2 / MEDIUM YELLOW ONION
EXTRA VIRGIN OLIVE OIL to taste
BALSAMIC VINEGAR to taste
SEA SALT to taste
- Cut off top and bottom of onion. Cut crosswise at bottom halfway through. Keep the skin on.
- Sprinkle some salt and olive oil.
- Roast in oven at 400°F (200°C) for about 30 min until soft. Check softness with a stick.
- Season with some salt and balsamic vinegar to taste. Serve hot.
