Pastrami Sushi

for two to three servings

1 lb (450 g) / COOKED RICE (white short grain, sushi rice)
6 slice / PASTRAMI
2 tbsp / RICE VINEGAR
a pinch / SEA SALT

WASABI or YUZUKOSHO to serve
SOY SAUCE to serve


  1. Mix warm rice, rice vinegar and sea salt.
  2. Make a sushi like shape w/ or w/o mold.
  3. Wrap with a sheet of pastrami. Put a small amount of wasabi or yuzukosho on top.

notes:

  • Pastrami can be substituted with roast beef, prosciutto or ham.
  • About 1.5 cups of uncooked rice is used for bite size 18 pieces (1 1/4" x 2").
  • Yuzukosho is made from yuzu citrus, salt and green chiles. It comes in a small jar or a tube like wasabi.
