Fresh Mushroom and Watercress Salad

1 bunch / WATERCRESS
8 / LARGE CRIMINI MUSHROOMS
2 tbsp / LEMON JUICE
for the dressing
1 tbsp / WHITE WINE VINEGAR
1 tbsp / RICE VINEGAR
1 tbsp / EXTRA VIRGIN OLIVE OIL
a few pinch / SEA SALT
- Whisk together the ingredients for the dressing. Clean the watercress and remove excessive water using a spinner.
- Slice the mushrooms thin and sprinkle lemon juice on top.
- Toss the mushrooms and watercress together in the dressing just before serving.
