Fresh Mushroom and Watercress Salad

for two servings

1 bunch  /  WATERCRESS
8  /  LARGE CRIMINI MUSHROOMS
2 tbsp  /  LEMON JUICE

for the dressing

1 tbsp  /  WHITE WINE VINEGAR
1 tbsp  /  RICE VINEGAR
1 tbsp  /  EXTRA VIRGIN OLIVE OIL
a few pinch  /  SEA SALT


  1. Whisk together the ingredients for the dressing. Clean the watercress and remove excessive water using a spinner.
  2. Slice the mushrooms thin and sprinkle lemon juice on top.
  3. Toss the mushrooms and watercress together in the dressing just before serving.
