Classic Spinach Salad with Bonito Flakes
for two servings
1 bunch / FRESH SPINACH
1 pinch / SEA SALT
BONITO FLAKES to taste
SOY SAUCE to taste
Cook spinach with salt in a large pot of boiling water for about 20 seconds.
Immediately place the spinach in ice water to bring out its crunchy texture.
Wash spinach under running water and squeeze out the remainder thoroughly with hands.
Cut to bite-size and sprinkle on bonito flakes. Add soy sauce to taste.
- Roasted white sesame is a good substitute for bonito flakes.
- Avoid boiling too long. Serve Al dente.
- Enjoy earthy and slightly bitter spinach with smoky bonito flakes!
